Vaal nu Shaak Recipe | Butter Beans Curry.

Vaal nu shaak or butter beans curry is one of very delicious gujarati curry recipe from gujarati cuisine. This curry is cooked oftenly in gujarati households for lunch and dinner. Not just in gujarat but this curry is also cooked in entire Indian houses but the way of making and ingredients vary from city to city. Mainly this Indian curry is prepared from butter beans, jaggery, gram flour and some other spices.

This butter beans are known by some other names like lima beans, vaal in gujarati etc. Lima beans curry is really very simple and easy to make plus requires very less time to cook is well. Only the soaking time of vaal is long but you can soak them one night or 6-7 hours before coking this curry. Usually this butter beans is a very uncommon ingredient used in Indian cooking and there are very few recipes made from this healthy ingredient.

There are many healthy benefits of this beans as they are good for health, rich in proteins, rich in fibers, balances blood sugar level etc. This quick vaal nu shaak goes really good with roti and simple rice but you can also have this with any other breads of your choice. Along with this you may also like some other gujarati curries like gathiya nu shaak, dahi saragva Sabji, Baingan masala etc…….

Ingredients for Vaal Nu Shaak:

100 gm Vaal Beans.
1 tsp Ajwain.
½ tsp Spicy Red Chilli Powder.
½ tsp Kashmiri Red Chilli Powder.
½ tsp Asafoetida.
½ tsp Turmeric Powder.
Salt according to taste.
2 tsp Gram Flour.
1 tbsp Jaggery.
Lemon Juice of Half Lemon.
3 tbsp Oil.
Some Coriander Leaves for Garnishing.

How to Make Vaal Nu Shaak:

Step 1.

Soak the vaal beans in water for 6-7 hours, after 6-7 hours drain the water and pressure cooker them along with water and salt for 2 whistles, sieve the vaal beans and keep the boiled water aside, we’ll use in further cooking.

Step 2.

Now heat oil in a non stick kadai, when oil gets hot add in ajwain, when ajwain starts crackling turn the heat off and add gram flour, turmeric powder, spicy red chilli powder, kashmiri red chilli powder and mix all the spices well.

Step 3.

Now turn the gas on and add vaal beans and again mix well then quickly add water in which vaal beans were boiled, now check the gravy and add salt according to taste.

Step 4.

Now add jaggery and mix well, now cover and cook it for 6-7 minutes, after 6-7 minutes add lemon juice again cover and cook for 2 minutes.

Step 5.

After 2 minutes turn the heat off and take out the butter beans curry in a serving plate, garnish it with some coriander leaves and serve with roti, puri or rice.
