Ingredients for Kathiyawadi Mix Veg Curry:

2 tbsp Chopped and Fried Potatoes.
2 tbsp Chopped and Fried Brinjals or Eggplants.
2 tbsp Chopped and Fried Red, Green and Yellow Capsicum.
2 tbsp Finely Chopped Cabbage.
2 tbsp Onions Cut in Square Shape.
1 Medium Size Finely Chopped Tomato.
3 tbsp Onion Paste.
2 tbsp Cooked American Corn Kernels.
2 tbsp Curd or Yogurt.
1 tbsp Garlic Chutney.
½ tsp Turmeric Powder.
1 tsp Coriander Powder.
1 tsp Cumin Seeds.
½ tsp Garam Masala.
1 tbsp Coriander Leaves.
Salt as per taste.
3 tbsp Oil.
Fried Fry Red Chillies for Garnishing.
Some Coriander Leaves for Garnishing.

How to Make Kathiyawadi Mix Veg Curry:

Step 1.

First of all heat oil in a non stick kadai then put dry red chillies and fry for few seconds and take out in a plate, now in same oil put cumin seeds and wait till starts slathering.

Step 2.

Now add in onion paste and cook it till it starts leaving oil at edges then add in garlic chutney and saute for little time.

Step 3.

Now add in tomatoes and cook till become soft then add in turmeric powder, salt, coriander powder and saute spices for little time.

Step 4.

Now add in curd or yogurt and cook it for little time then add in some water, fried brinjals, potatoes, cabbage, all three capsicum, square cut onions and American corn kernels.

Step 5.

Now cover and cook curry till it starts leaving oil at edges, when veggies get cooked and oil comes on top add in garam masala and aging cover and cook for 1 minute.

Step 6.

After 1 minute turn the heat off and take out the delicious kathiyawadi mix veg curry in a serving bowl and garnish with some coriander leaves and fried red chillies and serve hot.
