Cloves latika or lavang latika is traditional Bengali sweet recipe prepared at the time of festivals in Bengal and some other places of India. This pocket sweet recipe is a bit time taking but easy to make is well. Mainly it is prepared from all purpose flour, khoya, sugar, dry coconut and some other spices. For making this delicious and mouthwatering labanga latika there are three major steps first is making stuffing, second its outer layer and third one is sugar syrup.

You can make this easy cloves latika sweet for any special occasions, parties or festivals and make everyone surprised. The sugar syrup for this sweet dish should be one thread so you have to make sure that check consistency after and while making. After preparing the lavang latika you just have to soak them for a minute in sugar syrup and serve. Ingredients for Cloves Latika:

For Upper Layer:

100 gm All Purpose Flour.
40 gm Ghee or Clarified Butter.
Water as per required.

For Stuffing:

100 gm Khoya without Sugar.
50 gm Grated Dry Coconut.
3 tbsp Sugar.
½ tsp Cardamom Powder.
1-2 tbsp Chopped Almonds and Cashew Nuts.

For Sugar Syrup:

1 Cup Sugar.
½ Cup Water.
½ tsp Cardamom Powder.

Other Spices:

Cloves as per required.
Oil or Ghee for frying.

How to Make Cloves Latika:

Step 1.

First of all for making stuffing put khoya (without sugar) in a pan then put 1 tbsp sugar in it and cook on medium flame till sugar melts and khoya gets thick, stir it continuously otherwise khoya may get burnt, when khoya becomes thick turn the heat off and take out in a plate and let it cool.

Step 2.

When khoya becomes cool add in grated dry coconut along with 2 tbsp sugar then add in cardamom powder, almonds, cashew nuts and mix all the ingredients well to make stuffing, now make small balls from entire stuffing and keep aside.

Step 3.

Now for making upper layer put all purpose flour and ghee in a bowl and mix well then add water as per required and make nice dough from it, after making dough keep aside for 10 minutes to set.

Step 4.

Now make small balls from entire dough then take one ball and roll it like a roti, now make 2-3 inch long 2 strips from rolled roti, now put two strips cross each other (+) like this, now put one stuffing ball at centre.

Step 5.

Now cover the ball with all ends of strips to make clove Latika then put cloves at the necessary area that it should not open while frying (See Image), make all the cloves Latika this way.

Step 6.

Now heat oil in a kadai, when oil gets heated put all the cloves Latika in and fry at medium heat for 6-7 minutes, turn the sides after every 1-2 minutes so it can be cooked nicely then take out in a plate and let it cool.

Step 7.

Now for making sugar syrup put water and sugar in a pan cook till you get one thread consistency then add in cardamom powder and mix well, now turn the heat off and check the consistency and let it cool for few mintes.

Step 8.

When sugar syrup becomes cool put all the cloves Latika in it and keep soaked for 1 minute then serve, so the delicious cloves Latika is ready to serve.
